Homemade Gin!\u00a0\u00a0 And, yes, I am learning, albeit slowly.\u00a0\u00a0 This batch is significantly better than my two previous efforts!\u00a0 (You can find my posts on those here:\u00a0\u00a0 &#8220;<a href=\"http:\/\/shakennotstirred.us\/?p=1973\">I made Gin!!<\/a>&#8221;\u00a0\u00a0 and here:\u00a0 &#8220;<a href=\"http:\/\/shakennotstirred.us\/?p=2067\">Homemade Gin, Round 2<\/a>&#8221; .)<\/p>\n<p>This time I backed up significantly, starting much simpler.\u00a0 First of all I used just a very few botanicals.\u00a0 Obviously Juniper is required so that goes in.\u00a0 Coriander is very mild with a slight musty hay (think alfalfa) scent.\u00a0 It doesn&#8217;t so much as add flavor as it seems to add some complexity to the flavor.\u00a0 Then a very tiny bit of Cardamom, pepper, and lemon.<\/p>\n<p>The second major change from previous batches was that I only steeped the botanicals for about 40 hours.\u00a0 (I was going for 48 hours but sadly my real job got in the way and didn&#8217;t allow that.)<\/p>\n<p>Here&#8217;s the process for this batch:<br \/>\nDay 0:\u00a0 I assembled the following botanicals:<br \/>\nJuniper, 1 tablespoon<br \/>\nCoriander, 1 teaspoon<br \/>\nCardamon, 1 Pod broken<br \/>\nGreen peppercorn, 2 corns<br \/>\nAll of these items I put into 375 ml of 100 proof Vodka.\u00a0 Unlike previous batched I did not grind up any of these ingredients.<\/p>\n<p>+24 hours:\u00a0 I added the following.<br \/>\nDried Lemon Peel,\u00a0 Approx 1\/2 tsp<\/p>\n<p>I also tried the gin, just to see how it was going.\u00a0 I was pleasantly surprised!\u00a0 No bitterness at all and mild flavors.<\/p>\n<p>+42 hours:\u00a0\u00a0 I strained all remains and remnants from the liquid.<\/p>\n<p>At this point the Gin really tasted like &#8216;gin&#8217;!\u00a0 A bit light on the juniper but overall mildly spicy with just a hint of lemon.\u00a0 (Next time I&#8217;ll add a bit more citrus.)\u00a0 As expected it is not clear having a nice mild amber tinge to the gin.\u00a0 That&#8217;s easily fixable with an activated carbon filter (Brita, for example) but for the\u00a0 moment I&#8217;m pleased with the gin &#8216;as is&#8217;.<\/p>\n<p>Finally I let it sit for a couple of days in the pantry, just to let the flavors meld (?).\u00a0\u00a0 Then made a very cold, very welcome, Martini!\u00a0 It was totally acceptable.\u00a0 Certainly not worthy of even a single stem rating* of course, but a big step in the\u00a0 right direction!<\/p>\n<p><img data-attachment-id=\"2170\"
